December Meeting – Fourth Quarter Challenge
Fourth quarter challenge, Open or spontaneous fermentation. I guess my thoughts are a wild fermentation not collected from a cultured sample. I realize that may not necessarily be that spontaneous. Snagging a bee and dunking him in wort may not be a spontaneous infection but I would consider it a spontaneous action. From the AHA website... The Camp Fire–the most devastating wildfire in California’s history–has hit close to home for Sierra Nevada Brewing Co. While the Chico brewery was spared, many of Sierra Nevada’s employees, patrons and neighbors lost everything as the Camp Fire ravaged northern Californian.
